Darien Woman Creates Line of Organic Cookie Mixes

DARIEN, Conn. – Darien resident Kristin Farrell wanted to create a line of foods that not were not only tasty but also healthy and environmentally friendly. Last fall, she launched In A Jar, a line of cookie mixes with organic ingredients and “green” packaging.

“I always try to buy organic products, because it’s better quality. And I try to be as eco-friendly as possible,” Farrell said. The chocolate chip and oatmeal raisin cookie mixes come in reusable glass jars with labels printed on recycled paper.

Farrell came up with the idea and designed the jars and labels for a project last year while she was pursuing her visual communications degree at the University of Delaware. “I started showing it to people to see if they thought the design was good, and they said, ‘You should actually make the product.’ So I decided to give it a shot.”

“I’ve always loved baking cookies and elaborate cakes. I really enjoy coming up with visually appealing baked products.”

She started by selling the products a holiday fairs and later at a fundraiser for the RE Children’s Project. They quickly became popular. She just started mass-producing the mixes and sells them at Palmer’s Market in Darien, as well as at Salon S in Greenwich and Cooked and Co. in Scarsdale, N.Y.

“It’s been a lot of fun. I enjoy coming up with the different labels. They’re great for gifts, and we can customize the labels for different events like weddings and baby showers.”

Farrell said she is looking to expand the line with different products such as soups.

Farrell will be at Palmer’s over Memorial Day weekend, offering samples and selling jars specially wrapped as teacher gifts.
