Mill Street Bar And Table Opens In Greenwich With Farm-To-Table Focus

GREENWICH, Conn. - A host of Fairfield County farms and Hudson Valley purveyors are represented at Mill Street Bar & Table, which opened in Byram Sept. 22.

The elegant restaurant, located in a building dating to 1855, is all about American seasonal farm-to-table dining in a tavernesque setting. 

Among the local venues represented are Sport Hill Farm in Easton, Holbrook Farm in Bethel, Fort Hill Farm in New Milford, Millstone Farm in Wilton, and Stietzel Family Farm in Redding. Fleischers Craft Butchery of Westport, Hemlock Oysters of Cos Cob and Port Chester, N.Y.'s Coffee Path Roasters are also part of the restaurant's repertoire.

According to Chef Geo Lazlo, who many Fairfield residents know from his stint at LeFarm and The Whelk in Westport, dishes embrace the bounty of land, farm, and sea. 

Food memories are important to Lazlo, a Greenwich native, who said he strives to both embrace as well as challenge diners’ notion of what comfort food can be.

The restaurant’s menu features peak-season ingredients from a community of vendors including a unique relationship with its own organic farm, Back 40 Farm in Washington, Conn. (The Back 40 Farm has since expanded to include Back 40 Mercantile, a modern take on an old-fashioned general store in Old Greenwich and Back 40 Kitchen in Greenwich.)

The Mill Street menu also features items from an oyster bar and a custom-designed wood-burning grill, with breads and desserts made in-house daily by Pastry Chef Caryn Stabinksy, a Food & Wine "People’s Choice Award" nominee.
