Darien Chef Brings Seasonal Fare to the Table

DARIEN, Conn. ? This Wednesday, May 30, The Goose American Bistro & Bar will be celebrating its second year anniversary, and with everything half priced, it's one event patrons won't want to miss.

Upon opening in May 2010, owners and longtime Darien residents, Lynn and Mike Gagliardi, along with managing partner Michael Friedman and his wife Donna Vita, who did the interior design, have provided Fairfield County with tasty, eclectic dining options and an inviting atmosphere.  With executive chef Piergiorgio Nanni also on board, this summer will be no exception.

Nanni's recently unveiled warm-weather menu features his usual staples, such as lobster sliders, the Goose burger and steak frites, as well as new offerings. 

“It’s the summertime, so we try to keep our menu fresh,” he said.

Nanni grew up in Rome, trained at La Cordon Bleu in Paris, France and worked in restaurants throughout Europe before settling in America.  Given his background, he is proud of his partnerships with local farmers who provide him with ingredients for his daily farm to table salads.

His classic training is also evident in his free range roasted chicken “under the brick,” which is literally a chicken grilled with a terra cotta block on top of it. The weight of the brick ensures even cooking, crispy skin and extra moist meat. The Hawaiian sunfish, another new and exciting entree, is glazed in miso paste and served with ginger, sugar snap peas and jasmine rice. 

Nanni will also incorporate some traditional favorites of his as well, such as the Maltagliati, which translates to homemade pasta ribbons under quick-fire tomato sauce, basil and fresh mozzarella cheese. 

“I stole that recipe from my mother who still lives in Italy,” Nanni joked.
