DARIEN, Conn. – Regis Saget’s dream as a young chef in France was to come to the United States to work. When he finally got the opportunity, the new chef at Scena Wine Bar & Restaurant in Darien jumped at the chance.
“The brother of my best friend was a pastry chef in Greenwich at the time,’’ Saget said. “He said, ‘Would you like to go there to work?’ Three weeks later, his brother was picking me up at the airport in New York. I’ve been here ever since.”
That was 13 years ago, and although Saget traveled across the country on a three-week trip on one of his first vacations, he has found a home in Connecticut. The Norwalk resident has worked in restaurants in Greenwich, Fairfield and New Canaan.
“What I love most is the fall season,’’ Saget said. “But I also like it that you can see the seasons happening right in front of you. I love it here, and I love New England. And it’s great living so close to New York, because you’re exposed to so much.”
Saget is currently preparing for the three-year anniversary celebration of Scena on Sept. 1. The restaurant is owned by brothers Vicente and Kleber Siguenze, who also own Cava Wine Bar & Restaurant in New Canaan, 55 Wine Bar & Restaurant in Fairfield and Harvest Wine Bar & Restaurant in Greenwich. Scena, located at 1077 Post Road, is close to the Darien Playhouse and other attractions in the center of town.
Saget said he approaches his craft like he’s the captain of the team. “It’s a step by step process,’’ he said. “The first week I was here I wanted to see the way they were doing things. The second week I showed them what I wanted them to do. They’re a great group. They work as a team and help each other. It’s a good spirit.”
Saget has experience in Mediterranean, Spanish and French cuisines in addition to the Italian specialties at Scena. He’s anticipating a long tenure at his newest restaurant.
“I love working here,’’ he said. “I have to understand what I can bring to Scena with my various experiences. My focus is making sure the clientele wants to come back. That’s my goal.”
